Sunday Brunch is a tradition that dates back over a hundred years.  The term brunch was coined in 1895 by a British writer named Guy Beringer who saw it as a pleasant solution to Sunday morning grumpiness arising from Saturday night adventures.

Beringer wrote an article called Brunch: A Plea in which he said, “…why not a new meal, served around noon, that starts with tea or coffee, marmalade and other breakfast fixtures before moving along to the heavier fare?  By eliminating the need to get up early on Sunday, brunch would make life brighter for Saturday-night carousers. Brunch is cheerful, sociable and inciting. It’s talk-compelling. It puts you in a good temper.  It makes you satisfied with yourself and your fellow beings. It sweeps away the worries and cobwebs of the week.”  With this plea a Sunday tradition was born.

These words were written over a century ago but nonetheless perfectly describe Sundays in the the beautiful Gulf Front dining room of H20 Restaurant in the Hilton Hotel on Pensacola Beach. The atmosphere is luxurious but relaxed and greatly enhanced by live jazz.  Our Sunday vibe and will most certainly put you ‘in a good temper” no matter what you got up to on Saturday night.

The festivities start at the gentle hour of 11am and last until 2pm.  It’s a foodie paradise with an enormous selection of everyone’s favorite brunch items, both healthy and rich, as well as many surprises prepared by our celebrity Chef Dan Dunn.   Every week ‘Dano’ struts his stuff with new unexpected gourmet dishes like hoisin and beer braised pork shanks, chicken chili rellenos and fresh Gulf Coast seafood.

The buffet is distributed in five serving stations.  In the dining room we offer fresh fruit including navel oranges, granny-smith apples,  pineapples, honeyed cantaloupe and juicy watermelon.  Other healthy selections include yogurt, homemade granola, fresh made oatmeal and a wide selection of cereal for the kids. If you’re carbohydrate craver we have fresh pastries, muffins, croissants, gooey danishes, breads, bagels and baguettes on a table by the entry way.  Here you will also find a wide array of desserts such a fresh cannoli and tequila spiked key lime pudding.

In our Skye room you will discover a hot station with made-to-order omelets, fluffy pancakes and whipped-cream topped waffles as well as bacon, sausage, scrambled eggs, hash browns, fluffy warm biscuits, southern-style gravy and Mrs. Shirley’s famous homemade grits.  One room over you will find a prime rib carving station, sushi and three kinds of eggs benedicts.

While our brunch buffet goes beyond ordinary boundaries, the most notorious Sunday offering at H2O are the bottomless Bloody Marys and mimosas.  Our self serve Bloody Mary bar consists of three kinds of vodka and flavored sea salt, fresh steamed asparagus, pickled white asparagus, spicy green beans, fire roasted tomatoes, horseradish, crisp cucumbers, pickled okra, various spices and five kinds of hot sauce.

We’re also famous for our Seafood Bloody Mary.  It’s difficult to determine whether this spicy cocktail is a drink or a light lunch. Fresh raw oysters are layered in the bottom of the glass with spiced tomato juice and two jumbo gulf shrimp. A heaping scoop of lump crab meat completes this sinful creation.

      I was treated to your motehr’s day brunch. I had never been to your restaurant. The naked ravioli was brilliant. I may have to write to Bon Appetite so you have to give up the recipe, Loved both the cucumber and the bacon bloody Marys. Our server, Matt, was especially delightful. Great experience, can’t wait to come back.

    My family of four had Sunday Brunch at H2O and it was great!!!!!! The food selections were good and tasty. The fruit was fresh, the desserts were plenty and I thoroughly enjoyed the bottomless Mimosa’s! Now although this is a great way to start a Sunday, it can be considered a bit pricey for a family on a budget.
